I currently have truenas in a proxmox VM.
I’m thinking about to set Truenas as my main OS (replacing Truenas).
I didn’t find anything relevant on the web, maybe I didn’t search well.
Do you have any doc for the process ?
Will I lose my pool / containers and services or that is safe ?

It completely depends on how you set up Proxmox and the TrueNAS VM. If you have a HBA and passed through the entire controller, you shouldn’t have much trouble converting to a bare metal TrueNAS setup.
Back up your TrueNAS configuration file and secret keys if necessary. Fresh TrueNAS install on boot device and reload configuration and secret keys if necessary.

Otherwise save truenas config and restore once installed on bare metal
