I am building my first NAS/home server and am planning on starting with a mirror array with 2x 8tb hdds and was curious if I can have 2x 1tb m.2 drives in a mirror for boot, cache, and app drive ?

Drives used for a boot-pool can only be used for the boot-pool.
You can bypass the GUI/middleware, but this will be at your own risk and likely to break your system and will not assure smooth updates.
You’re better off using the 2 x m.2 drives for your apps and then use a decent small SSD for your boot-pool.
