Seeking advice on hardware setup and apps/vm's to use

I’m trying to figure out how to best setup my hardware for the things i would like to accomplish for my home server. I’ve dabbled with TrueNAS many many years ago, but have fallen out of the loop with it and don’t remember anything with it at all, yet i’m a fast learner.

The hardware i’ll be using is:

Ryzen 5 2600X
64GB Ram
ROG STRIX B450-F GAMING mobo
2x 500gb NVME drives
4x 16tb EXOS Seagate drives

I want to try and do these things with it:

Local filesever
Plex server
Mincraft server
Project Zomboid server (if i can)
Backup fileserver for my work office (I want it to run each night and backup just the files that have been changed or new for the day.)

My main concern and to make sure that it can be done, is i was thinking of using the 16TB hard drives as a raid-z1. Will i be able to have each item i want to do on the server be able to access the same pool of drives? its been so long that i dont remember how it all works. If i need to be laughed out of the forums for such stupid questions, i understand…lol.

I didn’t get the question. Can you explain?

Also, do you plan to use NVMe drives for apps and as boot drives at the same time? If so, it’s a bit controversial method. IMO, it’s better to have separate boot drive(s).
