Trying to add a new drive to my main pool and chainge raid config

I’m running TrueNAS Scale Goldeye and I CURRENTLY have a single drive pool (named meow) with one 1TB HDD on it, obviously running it in Raid0 / Stripe. I recently got a second 1TB HDD and I want to add it to my meow pool and change the config to Raid1 / Mirror. I have done some basic research and learned that I cannot do this without making a new pool and replicating my data. I have spent the last 2 hours trying to figure out how to do this and I am not having much luck

How can I back up my entire drive pool to my personal windows machine so that i can delete it and recreate a NEW pool using different config settings? I have tried to make a backup of my pool to a dataset then use syncthing to sync to my machine, but that for some reason is not reading my files, only the directories / datasets (I think?)

I am VERY inexperienced with this stuff so please if you can help dumb it down to a complete beginner level. I started home labbing a few weeks ago and do not understand much

Your search was not quite successful.
It is simple to convert a single drive vdev (= “1-way mirror”) to 2-way mirror. Go into Storage, select your vdev and click Extend as shown here:

What you can not do is change a mirror (including single derive) to raidz#, or the reverse.

What @etorix said is mostly correct.

On rare occasions, a new drive is a tiny bit smaller that an existing drive. Then, and only then do you have to copy off the data. But, attempt what @etorix wrote first.
