What is the output of zpool status -vv YOURPOOL?
Do you see UUIDs or the devs? AFAIK the GUI only displays devs like /dev/sda and not UUIDs even if they are shown in the CLI
IF the status above shows the dev names and not the UUIDs, then yes, that would be a known working approach[1].
