I know, it’s just quite unusual.
I mean, imagine the request has many votes so it’s accepted and then everyone removes their votes to use elsewhere and it suddenly looks like iX accepted something nobody voted for.

I’m not sure that’s quite how it works. Lets test that theory. If you take a look at

You can see we accepted and closed this proposal. It still shows the 14 votes cast that were present at the time of acceptance. Can any of you who voted for that confirm you got your vote “released” when we closed the thread?

Interesting, so it does let you remove it after the fact. Was your vote released before you manually went and removed it?

I.E if you had no 1 vote available, did removing a vote from that closed thread give you 2 available now?

But from the description you posted I would guess it did release the vote.
The problem is I didnt know that and thought I need to remove my vote manually.

Yes.

When a feature request you voted on is accepted, you get an alert like:

If you hover over the plus icon it says “Vote was released.”

I’m not sure how you’d confirm the actual number of remaining votes or if that number goes up when one is released like that.

I can confirm a vote was released when a voted for request was accepted.

(I checked at the time)

Can’t confirm if removing your vote from said request restores a magical extra vote, but suspect it doesn’t.

(Also counted my votes, and there are more now because of the accepteds)

As indicatted above, you actually have to go to the top of a post in Feature Requests to have access to a “Show my votes” button, and a special profile page with a “Votes” tab. The regular profile page, as accessed from the avatar on the top right lacks this “Votes” section.
There’s an obvious suggestion about the layout of the forum here…

I see a My Votes tab on the Feature Requests category page, but that just shows things I’ve voted on, including accepted ones. I don’t see anything like “You have X votes remaining” or “X/Y Votes used”.

Inside any Features Request thread you did not vote there is your number of remaining votes, or Limit if you used them all.

Got it. Hover over the Vote button on a thread and it displays as a tooltip.
