I understand that the k3s directory can be deleted. It is no longer used in Electric Eel. Is this correct?

If you’re 100% sure you don’t have to rollback to dragonfish then yes it’s save to delete.

Can you be more specific what actual directory you’re referring to?
Do you mean /mnt/<yourpool>/ix-applications/ or something else?

I understand that I can delete the entire ix-applications folder?

How does one go about that? I am on 25.04 and noticed it has nearly 60G of data in it. I tried to rename first but got the error “Device or resource busy”…
