I have this board for a completely different use-case (not a NAS) with a 12700k & ecc ram - I had stability & boot issues on newer bios versions & had to go all the way down to BIOS Version: 3101 (pretty old) to get things to boot properly. (after BIOS downgrade I’ve been stable for the last 179 days with no issues booting… that I remember from like I guess 6 months ago)
12900k is wayy overkill. Grab some more ram if you can.
Realistically you can likely save money on a used enterprise board since this isn’t 24/7 operations & power usage likely won’t be a major issue. This path also be nice since it would have built-in bmc (the add in card for bmc on the Pro W680 is a pain).
tldr; cpu/motherboard are too expensive for your specified usecase!
Well, compared with many others who posted after buying and were only seeking for validation, OP here asked for confirmation before buying—as should be.
There’s no written or unwritten rule that newcomers should pay feudal respect to the forum elders and heed everything the elders say. (Even though that would be nice for our egos…)
I do no think I have fully wasted my time here doing a round-up of the current DDR5 UDIMM solutions… and why I’d personally go for whatever good deal can be grabbed at the moment with DDR4 ECC UDIMM over DD5 if I were to make the build.

The build will work (minding the RAM issue). Is it overkill? Yes. But do what makes you sleep at night
If you are after reliability then I’d recommend going for an X13SCL-F or X13SCH-F. These are quality motherboards designed for 24/7 operations in addition to having IPMI so you can manage the server from the comfort of your chair.
So that is why I believed that you were not listening. However if I got the wrong end of the stick I apologise wholeheartedly.
It is absolutely not my intent to create the sort of environment that makes people want to stay away.
What can I say? I had a bad day and let my frustrations elsewhere spill over here - which I absolutely shouldn’t have.
But I did genuinely get the impression from what you said that you had decided to go ahead with your original build regardless of other people’s advice. And I fully accept that I was wrong.
