This happens when I add the VM. I selected the option for automatic creation of the Storage zvol

Did you choose a location for your new zvol ?
Also note: For VMs you want to have this zvol created on a NVMe or SSD Pool. If on HDs, you want a Pool made of pairs of mirrors ( lots of them), preferrably you also want a SLOG device ( e.g. an Intel Optane 900p or 905p).
Otherwise performance is gonna be very poor.
For windows 11 VMs, you need to choose UEFI and also change the machine type to q35 aswell as activate TPM 2.0 support via the CLI
