I can’t seem to see a dataset and it delcares them as automatically created by the system.
Where are they stored? I don’t need to access them, just ensure they are not on my boot drive

What version are you asking about?
They can’t be on their boot drive. When first starting the apps service you’re asked to choose a pool for the apps. The I volumes get placed in a hidden dataset called .ix-apps on the pool you choose

Is there a way I can see them via GUI?
Primarily just to ensure I have things set correctly, I don’t really want a containers size growing to 500G before I notice
They are not visible in the UI. We also don’t recommend them for production app deployments as they’re more meant for test deployments, for these and other reasons.
