I’m wondering if these new IP addresses will show up in networking and have the option to set VLAN ids and different MAC addresses.

This is a feature request that is gaining traction.

Add support for creating MACVLAN interfaces with "Add Interface"

TrueNAS should support creating and configuring a MACVLAN interface when using “Add Interface”. Ie, MACVLAN should be an option in this menu.
