You will get asked your performance goals and what you expect to be doing.
4 in Z2 will allow you to lose two drives and still be functional.
Lose the wrong two drives in your mirror and lose entire pool

That depends on how much capacity you need, or redundancy, or resilvering speed, or if you need block storage or not. There are a lot of factors however you did not provide a Use Case (what you want to do with TrueNAS).
If I was to give you a generic configuration, RAIDZ2 for redundancy is going to be very popular for typical home use. If your use case was only a Media Server, RAIDZ1.
Also, a list of the hardware you plan to use would be handy along with the use case so we can see if there are any concerns.
