I have a RAID 10 configuration. One drive failed and i offlined it. I started the RMA process and i’m waiting for the replacement. In the meantime, should i turn off the server or keep it going? It has redundancy obviously so it could run, but i don’t know if this will stress the remaining drives or something.

It won’t stress the drives at all.
However please note that you currently have a non-redundant pool (assuming that the mirror was 2-way). Do you have a backup?
I guess a sudo zpool status -v could be helpfull just to verify your pool setup. Post back using Preformatted Text mode (</>) or Ctrl+e on toolbar.
Raid 10 isn’t a ZFS term so we should check what you mean and be specific on the setup.
