As an update, I had to reinstall the NVIDIA drivers after upgrading Electric Eel to the latest version.
After that, I had to run through these steps again, but I used the commands in the first post of this thread:
After doing so, Plex wouldn’t show the GPU and only had “Auto”, but it works!
