So, Just in case anyone happens to stop by and read all these posts and gets to the end…
The solution ended up being to pull the disks and reformat them. I ran a series of tests on them again after reformatting them and found no errors on the disks.
Put them back in TrueNAS restored the pool and now for several days have had zero errors…
I have no clue why this ended up happening and still think it had something to do with the upgrade to 25.04.
I will obliviously continue to monitor the system and report back if there are any issues.
